Carrot Cake


I got the recipe from this book; 'Joy of Baking', bought it at Bake With Yen a couple of years ago. This is the book that ignite me into the cake making world, and somehow I ended with a small cake business. Oders are overwhelming for this carrot cake, and i got repeat orders too. They like the moistureness of the cake and when combine with the cheese frosting, it's a heavenly treat. I love to share this simpe but wonderful recipe with you.

Ingredients For the Cake:-

A)
250 g plain flour
11/2 tsp baking soda
1 tsp salt

B)
170 g castor sugar
140 g brown sugar
4 egg yolks
11/2 cups veggie oil
1 cup grated carrot

C)
4 egg white

D)
100 g toasted chopped walnut

Method :
Preheat oven to 180C
a) Sift A, put aside
b) Mix B thoroughly
c) Beat egg white with electric mixer until stiffen.
d) Add A to B, mix well.
e) Add in egg white to to mixture and slowly mix it. Do not overbeat, enough by stiring the egg white combine. This will make the cake lighter.
g) Finally add in the walnut.
h) Greased 9 inch pan.
i) Bake for 1-11/4 hours.

Let cool.

Cream Cheese Frosting

Ingredients:-
200g cream cheese
180 g whipping cream
100 g castor sugar.

Method
a)Beat cream cheese and sugar until white and fluffy
b) Add in the whip cream and beat until smooth.

Wooww.. belum pernah sekali pun buat carrot cake.. walaupun dah collect macam2 carrot cake nyer resepi.. Terasa pulak nak cuba resepi ni.. tapi boleh rossya tahu.. Nen guna vege oil jenis apa yang sedap. What do you think of Canola or Sunflower oil for cake baking? I find some other vege oil leaves a bit of perculiar taste on cakes..

may be u boleh melt the butter instead...i klu buat choc cake yang mana recipenya veggie oil, i meltkan butter. rasa lagi lemak dan sedap...nanti nak try on carrot cake plak,
