Pineapple Tart

This morning, i made Pineapple Tart. The urge to make the tarts simply came to my mind. I haven't got the right tool, to mould the tart. Despite the shape is a little off but the taste is simply out of this world. This recipe is actually from my mother. She used to make tarts during festive season, I being the helpful daughter will always help to fill the pastry with pineapple jem, tho i don't like the messy and sticky feeling. It's a torment i have to deal with, and not until this morning (it has been like more than 10 years) that we stopped making Pineapple Tart.

Here's the simple recipe, i hope you guys can try this.

Pastry:

3 oz butter (u can add more if needed)
150 gm flour
1 egg yolk.

Method : Rub the butter and flour , mix in the egg yolk.

Pineapple Jam :

1 pineapple - blend in the food processor , put under strainer, (u can make pineapple juice with the unwanted juice)
1' cinnamon stick (do not use powdered)
200 gm sugar (add to your taste)

Put all in heavy saucepan, cook till thicken. Keep cool. Can be refrigerate till up to more than 2 months.

Assemble : Take small amount of pastry, put in the jem, bake at 180C for 20 minutes
