More Eggs
Ok 3 is not enough, so this morning i pun another 1 = 4 small eggs, turns out just perfecto, so yesterday with 3 the cookies are not yet perfect.

Eggs The Problem
It’s been quite some time since my last entry. Why? Nothing, it just I haven’t got the mood to write. Well this is partly caused by my hectic weekends. Raya is coming and my cookies order list is getting longer. This is the first attempt me selling cookies for Hari Raya, and so far I can say the respond is quite good. I got around 4300 order for Cornflakes Rocher and 1600 for Walnut Choc. Chip, this, I suppose is not so bad for a start.
Last Sunday I slaved myself to Walnut Choc Chip just to find it’s a bit hard, though it’s still crispy but not close to perfect. So all 850 will be rejected for delivery, well Mak and Aunty will have a lot of cookies from me this Raya..hehehe. Ok, yesterday I was wondering why it’s rock hard? The amount of butter is ok, flour? perfect, oats? Right amount too, so what went wrong, finally it’s the egg. Somehow I got the smallest egg, with the missing water content results in hard cookies. So this morning instead of 2 eggs, I put in 3 that is equivalent to 2 large eggs. This simple equation results in perfect cookies.

Pineapple Tart
This morning, i made Pineapple Tart. The urge to make the tarts simply came to my mind. I haven't got the right tool, to mould the tart. Despite the shape is a little off but the taste is simply out of this world. This recipe is actually from my mother. She used to make tarts during festive season, I being the helpful daughter will always help to fill the pastry with pineapple jem, tho i don't like the messy and sticky feeling. It's a torment i have to deal with, and not until this morning (it has been like more than 10 years) that we stopped making Pineapple Tart.
Here's the simple recipe, i hope you guys can try this.
Pastry:
3 oz butter (u can add more if needed)
150 gm flour
1 egg yolk.
Method : Rub the butter and flour , mix in the egg yolk.
Pineapple Jam :
1 pineapple - blend in the food processor , put under strainer, (u can make pineapple juice with the unwanted juice)
1' cinnamon stick (do not use powdered)
200 gm sugar (add to your taste)
Put all in heavy saucepan, cook till thicken. Keep cool. Can be refrigerate till up to more than 2 months.
Assemble : Take small amount of pastry, put in the jem, bake at 180C for 20 minutes

Steamed Fruit Cake
This is the steamed version. It is very moist and fruity. This is one of my favorite.

Oreo Swirl Cheese Cake
This is a simple creation of cheese cake. The cheese melt in the mouth and is light and creamy. A novice baker can bake this and I guaratee it will turn out just like in the picture :). Cheese cake is the simplest cake of all, and you can make it effortlessly, but the result is simply great and will never let u down.
Ingredients :
Base:
2 pack (2x150g) Oreo biscuits - finely crushed in the food processor (put aside 1 tbsp for later use)
30g butter (a little more can be add)
In a 9' springfoam pan, pressed the finely crushed oreo and butter at the base of the pan.
Set aside.
Filling:
750g cream cheese (i used Philly)
200 g castor sugar
2 tablespoon flour (plain flour or corn flour; corn flour will produce better texture)
4 eggs
1 teaspoon vanilla essence.
Beat cream cheese till soft, add sugar, vanilla, and eggs one at a time. Add in the flour.
Pour the filling to the prepared base. Sprinkle the 1tsbp of oreo on the cake, and with a knife or toothpick swirl to make a pattern. Baked at 140C for 30-45 minutes.
Let cool in the oven, with the door slightly open. Refrigerate for 4 hours or overnight. Serve cool.

Mrs. Fields Cookies Result
So the Supposedly Mrs. Fields cookies turn out really great. My tester loves it. It is crunchy. I brought the cookies to Mak’s house; Firah and Hussein just love it. They are emptying the cookie jar very fast. I think I should hide it somewhere just to make sure, Iqah, Sarah and Haziq can have a taste of it too. One note, if you like your cookies kind of chewy, bake for less than 15 minutes, for crispy cookies bake for 25 minutes at 180 C.
I still haven’t got the picture. Tend to this morning, but with the rushing to work, I forgot all about it. Anyhow I will post it later.

Peppermint Patties
Peppermint Patties
What a fine way to end dinner with peppermint patties. Cool and refreshing.
Here's a simple and easy recipe that is worth trying.
Ingredients:
14 oz. can sweetened condensed milk
1 tbsp. peppermint extract
6 cups confectioners' sugar
1 1/2 pounds chocolate flavor candy coating*, melted
Instructions:
In large mixer bowl, combine milk, extract and food coloring if desired. Add 6 cups sugar; beat on low speed until smooth and well blended. Refrigerate overnite until mixture is harden and easy to shape. Shape into 1-inch balls. Place 2 inches apart on wax paper-lined baking sheets. Flatten each ball into a 1 ½-inch patty. Let dry 1 hour or longer; turn over and let dry at least 1 hour. With fork, dip each patty into warm candy coating (draw fork lightly across rim of pan to remove excess coating). Invert onto wax paper-lined baking sheets; let stand until firm. Store covered at room temperature or in refrigerator.
It’s kind of hard to shape into balls, so what I did was I spoon the peppermint filling into chocolate-filled mould. It turns out great too.
Instead of using the choc flavour candy coating, I used dark chocolate, or milk chocolate would be fine.

2 eggs
1 tsp. real vanilla
2 1/2 cups oatmeal(225g)
2 cups All purpose flour (123x2=246 g)
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3/4 lb. Semi-sweet chocolate chopped into chunks (300g)
1 1/2 cups toasted pecans or any nut of your choice (200g) - i used walnuts
In a large mixing bowl, cream together the butter, sugar and brown sugar on medium speed until light and fluffy. Add the eggs one at a time,then the vanilla and beat until well combined.
Put the oatmeal into the blender in small batches and blend until almost the consistency of flour. Combine it in a separate bowl with the flour, salt, baking powder and baking soda. When well mixed, add it to the butter, sugar and egg mixture.
Add the chocolate chunks and the pecans to the above combination of dry and wet ingredients. Mix only until well combined.
It turns out good. The color is perfect golden brown, looks crunchy, and the smell...simply irresistible. Tomorrow i will post the picture and will put up comments from my regular tester.

Hello ! Finally my first blog, well i used to surf to other people's blog, sharing thots , now i have my own place. This is pretty neat. Credit to those who invented this and giving it for free. Well for people like me who like to write this place is just what i needed most.

a) Work , yes in the IT world, develop system (not that nerd kind,and i wore no spectacles), meeting clients; this is work to get money, but my real passion is COOK, i really love to cook, trying out new recipe i found while surfing, and the pleasure to look to those who tried my inventions, mixed reactions; surprise, what's this yucky stuff , i like, wow, nice, dont do this ever again and the list goes on ..
b) married, yes, 4 years to a loving, kind, funny man. oh one more thing , creative in all sense. and again i miss one thing; an avid TV fan, quite sporty in his own way i should say...
