This morning i tried this interesting recipe i found at http://www.sallys-place.com.
1 cup butter (236g)
1 cup sugar (170g)
1 cup brown sugar (170g)
2 eggs
1 tsp. real vanilla
2 1/2 cups oatmeal(225g)
2 cups All purpose flour (123x2=246 g)
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3/4 lb. Semi-sweet chocolate chopped into chunks (300g)
1 1/2 cups toasted pecans or any nut of your choice (200g) - i used walnuts
In a large mixing bowl, cream together the butter, sugar and brown sugar on medium speed until light and fluffy. Add the eggs one at a time,then the vanilla and beat until well combined.
Put the oatmeal into the blender in small batches and blend until almost the consistency of flour. Combine it in a separate bowl with the flour, salt, baking powder and baking soda. When well mixed, add it to the butter, sugar and egg mixture.
Add the chocolate chunks and the pecans to the above combination of dry and wet ingredients. Mix only until well combined.
It turns out good. The color is perfect golden brown, looks crunchy, and the smell...simply irresistible. Tomorrow i will post the picture and will put up comments from my regular tester.
